Christmas Cracker Toffee

Ingredients

  • 35-45 Saltine Crackers (about 1 sleeve or enough to cover one baking tray)
  • 1 cup Brown Sugar
  • 1 cup Butter
  • 2 cups Semi-Sweet Chocolate Chips
  • 1/2 cup M&M's, sprinkles, nuts or your choice of toppings

Instructions

  • Preheat the oven to 350° F degrees.
  • Line a 10 x 15 inch baking tray with aluminum foil and spray it with cooking spray. Cover the tray with the saltine crackers lined up next to each other. Set aside.
  • In a medium pot, heat the brown sugar and butter on medium heat. Cook until the sugar begins to make small bubbles. Cook the mixture at a low boil for 3 minutes, stirring, and it begins to caramelize. If you have a candy thermometer, you want it to read between 271°F and 289°F.
  • Pour the sugar mixture over the saltines and spread evenly over the top to cover them. Place in the preheated oven for 3-5 minutes.
  • Remove the pan from the oven and quickly sprinkle the chocolate chips on top. Let sit so the chocolate can melt (You can return to the oven and bake for an additional minute or so). If you want, you can melt the chocolate in the microwave, let the crackers cool a few minutes before spreading the melted chocolate over them.
  • Remove the pan from the oven and spread the melted chocolate evenly over the brown sugar layer. Set aside to start cooling.
  • After 5-7 minutes, while still warm, top with your favorite toppings such as m&m’s, sprinkles, or nuts. Use a spatula to press the topping into the chocolate.
  • Continue to let cool. You can also put the tray in the refrigerator for a few hours or overnight to let the bark harden completely.
  • Once the toffee has hardened, break it apart with your hands or cut into squares with a heavy duty knife.

Notes

When breaking up the toffee, make sure that none of the aluminum foil is stuck to the underside before serving.
