- 2/3 cup Pure Maple Syrup 100% real maple syrup
- 2/3 cup Beer something like Modelo Negra or other medium to dark beer. Not too hoppy tasting
- 1 Tbsp Ginger Powder or fresh grated ginger
- 1 1/2 tsp Kosher Salt
- 1/2 tsp Pepper
- 4 Bone-In Rib Pork Chops about 7 oz each, not too thick
Add the maple syrup, beer, ginger, salt, and pepper to a gallon sized plastic zip-closure baggie, or a shallow bowl. Mix the ingredients together.
Add the pork chops and seal the baggie (or cover with plastic wrap or a lid, if using another container).
Place in the fridge and let marinate overnight, or even two nights, if you want the pork chops super tender. If you don't have that kind of time, then marinate for a minimum of 4 hours.
COOKING THE PORK CHOPS
Heat oven to 400° F.
Remove the pork chops from the marinade (discard marinade) and place on a baking sheet.
Bake for 10-13 minutes, then check the temperature with an instant read thermometer. You are looking for 140° F. Thicker chops will take longer.
Take the chops from the oven at 140° F and let rest, loosely covered with foil, for 5 minutes before serving
GRILLING
Heat grill to medium-high.
Remove the pork chops from the marinade (discard marinade) to greased grill and cook for 8-10 minutes, turning every 3 minutes, until juice runs clear and just a hint of pink remains. 140° F to 145° F.
Let rest, loosely covered with foil, for 5 minutes before serving.
