Ingredients

  • 2 Tbsp Olive Oil
  • 1 lg Yellow Onion
  • 1 Bay Leaf
  • 4 cloves Garlic finely minced or pressed
  • 1 lb Ground Beef or Ground Turkey
  • 3 tsp Chili Powder
  • 3 tsp Ground Cumin
  • 1/4-1/2 tsp Cayenne Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 1/2 tsp Smoked Paprika
  • 1 -14 oz can Diced Tomatoes undrained
  • 1 -6 oz can Tomato Paste
  • 1 -4 oz can Diced Green Chiles
  • 1 cup Beef Broth
  • 1 -15 oz can Red Kidney Beans drained and rinsed
  • 1 tsp Kosher Salt or 1/2 tsp table salt, or more to taste
  • 1/2 tsp Black Pepper

Instructions

  • Heat a Dutch oven or saucepan over medium heat. Add the olive oil, then the onion and bay leaf. Sauté, stirring occasionally, until the onion turns translucent.
  • Add the garlic and cook for about 30 seconds, stirring frequently.
  • Add the ground beef or turkey and cook, breaking up the meat as you stir occasionally. Cook until mostly done.
  • Add the chili powder, cumin, cayenne pepper, onion powder, garlic powder, and smoked paprika. Stir well.
  • Add the can of undrained diced tomatoes, then stir in the tomato paste until well incorporated.
  • Add the diced green chiles.
  • Stir in the beef broth.
  • Add the kidney beans.
  • Add the salt and pepper. Stir well.
  • Bring to a low simmer. Then cover and reduce the heat to low and cook for 20 minutes, stirring halfway through.
  • Taste and adjust seasoning, if desired.
  • Serve with any toppings you like*.

Notes

*Some topping ideas are shredded cheddar cheese, cilantro, finely chopped onion, avocado, corn chips, sour cream, green onion.
