Banana Chocolate Chip Muffins

Ingredients

  • 2 Ripe Bananas
  • 2 large Eggs
  • ¾ cup Brown Sugar
  • ½ cup Unsalted Butter, melted and cooled
  • 1 teaspoon Vanilla Extract
  • 2 ¼ cups All Purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoon Cinnamon
  • ½ teaspoon Salt
  • 1 cup Semi-Sweet Chocolate Chips (plus extra to sprinkle on top)
  • ½ cup Chopped Walnuts, optional

Instructions

  • Heat oven to 350° F.
  • Spray a 12 cup muffin tin with nonstick spray.
  • In a mixing bowl, mash the bananas very well.
  • Add the eggs, brown sugar, cooled melted butter, and vanilla. Mix well.
  • In another mixing bowl, sift together the flour, baking powder, cinnamon, and salt.
  • Add the wet ingredients to the dry. Gently fold together using a spatula. Don't over mix.
  • Add the chocolate chips and walnuts, if using. Gently fold to combine.
  • Fill the muffin pan holes about ¾ of the way full. Use all of the batter to fill all 12 cups. It is okay to fill to the top as that will produce a nice crown (muffin top). Sprinkle a few chocolate chips on top of each for a pretty presentation.
  • Bake at 350° for 20 to 27 minutes, or until a toothpick inserted into the center comes out clean. They will only be lightly browned on top.
  • Let cool in the muffin tin about 20 minutes, then remove muffins to a wire rack to finish cooling (or enjoy them warm!).

Notes

Be careful not to over mix the batter.
