Banana Chocolate Chip Muffins are a great way to use up ripe bananas. The muffins bake up soft and flavorful, and the sweet chocolate chips are in every bite!
1cupSemi-Sweet Chocolate Chips(plus extra to sprinkle on top)
½cupChopped Walnuts,optional
Instructions
Heat oven to 350° F.
Spray a 12 cup muffin tin with nonstick spray.
In a mixing bowl, mash the bananas very well.
Add the eggs, brown sugar, cooled melted butter, and vanilla. Mix well.
In another mixing bowl, sift together the flour, baking powder, cinnamon, and salt.
Add the wet ingredients to the dry. Gently fold together using a spatula. Don't over mix.
Add the chocolate chips and walnuts, if using. Gently fold to combine.
Fill the muffin pan holes about ¾ of the way full. Use all of the batter to fill all 12 cups. It is okay to fill to the top as that will produce a nice crown (muffin top). Sprinkle a few chocolate chips on top of each for a pretty presentation.
Bake at 350° for 20 to 27 minutes, or until a toothpick inserted into the center comes out clean. They will only be lightly browned on top.
Let cool in the muffin tin about 20 minutes, then remove muffins to a wire rack to finish cooling (or enjoy them warm!).
