Equipment

Ingredients

  • 1 ½ lbs Lean Ground Beef (or ground turkey)
  • 1 cup Onion chopped
  • 2 Green Bell Peppers, diced
  • 3 cloves Garlic, minced (or 2 teaspoons garlic powder)
  • 1 teaspoon Taco Seasoning, (or Cajun, or other flavorful blend you like)
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Red Pepper Flakes (or to taste)
  • 1 Tablespoon Worcestershire Sauce
  • 14.5-ounce can Diced Tomatoes
  • 2 cups Beef Broth
  • 1 ½ cups Uncooked White Rice
  • 2 cups Sharp Cheddar Cheese, shredded
  • 1 cup Pepper Jack Cheese, shredded

Instructions

  • Preheat oven to 350° F and spray a 13”x9” baking dish with nonstick cooking spray.
  • Heat a large frying pan over medium-high heat. Add the ground beef, onions, and bell peppers. Cook until ground beef is no longer pink and onions and peppers are soft.
  • Drain, and add garlic, taco seasoning, pepper and red pepper flakes.
  • In a bowl, combine Worcestershire sauce, diced tomatoes, rice and beef broth. Add to the meat mixture and stir to combine.
  • Add the mixture to the prepared baking dish.
  • Cover the baking dish tightly with foil and bake for 1 hour, or until the rice becomes tender.
  • Remove from the oven, remove and discard the foil. Top with shredded cheese, place back in the oven uncovered and cook for an additional 5-10 minutes or until the cheese has melted.
  • Serve hot.

Notes

  • Instead of fresh garlic cloves, try garlic powder.
  • You can swap the traditional lean ground beef for lean ground turkey, ground chicken, or even ground sausage for a change of pace, and it will still be just as delicious.
  • Toss the taco seasoning out and use cajun seasoning for anybody who likes cajun seasoning.
  • Like some heat? Increase the red pepper flakes and/or add a dash or two of hot sauce.
  • Trade out the rice for quinoa, cauliflower rice, beans, etc.
  • While traditional stuffed bell peppers are made with green peppers you can swap these out for red yellow or orange peppers in this easy casserole recipe.
