Breakfast Sliders

These Breakfast Sliders are so good. Tender Hawaiian rolls get topped with colby cheese, scrambled eggs and ham before getting topped with a savory, buttery topping seasoned with everything bagel seasoning. These are baked until the cheese is melty. These are perfect for the holidays, brunch or great for back to school.

Equipment

Ingredients

  • 12 count Hawaiian Rolls
  • 8 slices Colby Jack Cheese
  • 6 ounces Thin Sliced Deli Ham
  • 10 Eggs
  • 1 stick Butter (8 tablespoons)
  • 2 teaspoons Dijon Mustard
  • 1 teaspoon Worcestershire Sauce
  • 2 teaspoons Everything Bagel Seasoning
  • 1 teaspoon Poppy Seeds

Instructions

  • Preheat oven to 350°F.
  • In a medium frying pan or skillet melt 2 tablespoons of butter over medium heat.
  • Whisk the eggs with the Cajun seasoning.
  • Add your eggs to the pan and stir until cooked through and scrambled.
  • Slice your rolls in half and lay the bottom half in a 9x13 baking dish.
  • Lay out 4 slices of cheese on top of the rolls.
  • Next layer the eggs all over the top.
  • Fold your ham slices and place on top of the eggs.
  • Next add the remaining slices of cheese on top of the ham.
  • Place the top rolls on top of everything.
  • In a medium mixing bowl melt the remaining 6 tablespoons of butter.
  • To the butter add the Dijon mustard, Worcestershire sauce, everything bagel seasoning and the poppy seeds, stir to combine.
  • Spoon the butter mixture all over the tops of the rolls. Use a sharp knife to cut between each roll to make it easier to serve, if desired. Or cut them after baking.
  • Cover the dish with foil and place into the oven and bake for 20 minutes. Remove foil and bake another 10-15 minutes, or until the cheese in the middle has melted, and the rolls are light golden brown in color.
  • Let cool slightly, cut to separate each roll (if you didn't before baking) and serve!

Notes

You can make these a day ahead of time and keep wrapped up in the fridge, just before serving pour over the butter mixture and bake as above.
Swap out the ham for sausage or bacon.
Switch up the cheese, use pepper jack, cheddar or Swiss.
Add some hot sauce, or jalapenos for a kick.
Refrigerate leftovers for up to 3 days.
