Instructions
Heat a large pot with oil over medium heat. Saute onion, bell pepper and garlic for 1-2 minutes until fragrant.
Add ground chicken and cook for 3 minutes, stirring to break up the meat.
Now add chicken broth, tomato sauce, diced tomatoes, smoked paprika and parsley. Bring to a simmer. Then add pasta.
Cook for about 12 minutes until pasta is al dente.
Stir in cheese to melt.
Garnish with more parsley and serve.
Notes
Optional Ingredients
Bay Leaf
– optional. Or use Italian seasoning.
Soy Sauce
– optional, for a deeper flavor.
Red Pepper Flakes
– optional, for a little heat.
*Substitute shredded rotisserie chicken for the ground chicken: Just add it in last and stir.
Store 3 days in refrigerator
