- There is a classic goulash recipe, traditional Hungarian Goulash, that has meat (usually tender chunks of beef), cooked in a veggie and tomato sauce served alongside egg noodles, most commonly.
- This recipe is an American-style Goulash, some people call it American chop suey (Usually for the beef goulash).

Simple Ingredients
- Olive Oil – or vegetable oil, such as canola.
- Onion – yellow or sweet onion. Or onion powder.
- Green Bell Pepper – or red bell peppers
- Garlic Cloves – or garlic powder
- Ground Chicken* – or ground turkey
- Chicken Broth – or water (or add bouillon to the water).
- Tomato Sauce – or tomato puree with a little extra water added.
- Diced Tomatoes – with the liquid
- Hungarian Paprika – (use sweet paprika, not the hot!). Or try smoked paprika.
- Elbow Macaroni – uncooked, medium size (10-ounces).
- Shredded Cheddar Cheese – optional, or use mild cheese of your choice (mozzarella is nice).
- Bay Leaf – optional. Or use Italian seasoning.
- Soy Sauce – optional, for a deeper flavor.
- Red Pepper Flakes – optional, for a little heat.
- Parsley – use fresh or dried in dish and as a garnish.
*Substitute shredded rotisserie chicken for the ground chicken: Just add it in last and stir.
Equipment Needed: A large skillet with a lid, or a Dutch oven. And a spoon for stirring.
How to Make Chicken Goulash
1) Heat a large pot with oil over medium heat. Saute onion, bell pepper and garlic for 1-2 minutes until fragrant.
2) Add ground chicken and cook for 3 minutes, stirring to break up the meat.
3) Now add chicken broth, tomato sauce, diced tomatoes, paprika and parsley. Bring to a simmer.
4) Then add pasta, cover and cook for about 12 minutes until pasta is al dente. Stir in cheese to melt. Garnish with more parsley and serve.

Storage of Leftover Chicken Goulash
Cool the leftover Goulash and put in an airtight container. Keep in the fridge up to 3 days. Freezing is not recommended.
