Equipment

  • Baking Sheet
  • Parchment Paper
  • Large Mixing Bowl
  • cooling rack
  • Microwave Safe Bowl
  • scoop

Ingredients

  • 1 Box White Cake Mix
  • cup Vegetable Oil
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 12 ounces Meltable Almond Bark or White Chocolate
  • Easter Colored m&m’s Candies (or sprinkles of your choice)

Instructions

  • Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, combine the cake mix, vegetable oil, eggs, and vanilla. Stir until well incorporated.
  • Set the bowl in the refrigerator for 30 minutes to chill.
  • After 30 minutes, set the oven temperature to 350 degrees F.
  • Remove the bowl from the refrigerator. Scoop the dough into 1-inch balls and place on the baking tray, leaving about 2 inches in between each cookie.
  • Bake for 8-10 minutes. Do not over bake.
  • Remove the tray from the oven and let the cookies cool on a cooling rack.
  • While the cookies are cooling, microwave the melting bark in a microwave safe bowl in 30-second intervals until smooth.
  • Dip a cookie half way into the melted bark and set down. Sprinkle with the m&m’s or your preferred sprinkles. Set aside so that the bark can harden. If you want to speed up the process, place the cookies in the refrigerator for an additional 5 minutes.
  • Serve with your favorite glass of milk.

Notes

Tips

  • Cake mix cookies tend to be very delicate when handling. Make sure to make the dough balls about 1-inch in diameter. Too large and the cookies will flatten and not be very easy to work with.
  • Be sure to completely cool them before dipping into the melted almond bark.
