These easy cookies are made with just 6 simple ingredients, including store-bought cake mix, oil, eggs, almond bark, and M&M's.
The result is a sweet vanilla cookie that's full of flavor and the perfect soft texture.
How To Make Easter Cake Mix Cookies
• Line your cookie sheet with parchment paper and set aside.
• Combine the cake mix, vegetable oil, eggs, and vanilla extract in a large bowl. Stir until all ingredients are well incorporated.
• Place the bowl with the cookie dough in the refrigerator for 30 minutes to chill.
• Once the time is up, preheat the oven to 350 degrees F.
• Remove the mixing bowl from the fridge and use a cookie scoop to scoop the dough into 1-inch balls. Place cookie dough balls on the parchment lined baking tray while leaving about 2 inches in between each cookie dough ball.
• Bake cookies for 8-10 minutes. Do not overbake them.
• Remove the cookies from the oven and let them cool on a wire cooling rack.
• While they're cooling, melt the bark in a microwave-safe bowl in 30-second bursts, stirring in between bursts, until it's nice and smooth.
• Dip a baked cookie into the melted bark so it covers half the cookie and then place back on prepared pan. Add M&M's or sprinkles to the melting chocolate before it hardens. To speed up the process of hardening the chocolate, you can place the cookies in the fridge for 5 minutes.
• Serve and enjoy.
How to Keep Cookies from Getting Flat
Sometimes this happens when you make your cookie dough balls too big. You only want them to be about 1-inch in diameter. Any bigger and they'll flatten out and not be easily workable for dipping in the chocolate without crumbling.
Tips and Variations
- I used a store-bought boxed white cake mix for these Easter treats. You can use your own homemade white cake mix recipe if you prefer.
- You can use your favorite flavor of cake mix, like a Funfetti cake mix to make Easter Funfetti Cake Mix Cookies. They're the easiest cookies to make for Easter dessert.
- The M&M's really bring fun, festive Easter colors to these Easter cookies, but you can use pastel colored sprinkles and some white chocolate chips if desired. Cadbury eggs would also be a fun addition to your easy Easter cookie recipe.
- In place of the almond bark, if you need to, you can use candy melts or melting chocolate wafers. You could also use a homemade frosting to place on the cookies and then add the chocolates or candies.

Notes
Tips
- Cake mix cookies tend to be very delicate when handling. Make sure to make the dough balls about 1-inch in diameter. Too large and the cookies will flatten and not be very easy to work with.
- Be sure to completely cool them before dipping into the melted almond bark.
