Chicken Cobbler Pot Pie Is a delicious one pan dinner recipe that uses a rotisserie chicken (or just cooked chicken) and has a golden brown biscuit topping. Make this easy chicken recipe any time you want a quick dinner recipe that can be on the table relatively fast, with minimal prep. This chicken casserole is the best comfort food recipe!

This chicken casserole-like recipe is easy to prepare, and needs no pre-cooking, as long as you get a cooked rotisserie chicken or have some cooked chicken available.

It takes about an hour to bake, but it is so hands-off after the prep. You can go get some things done while it is cooking!

Why is it Called Chicken Cobbler?

This chicken recipe can be called lots of things, but to me it is most like a cobbler because of how the ingredients are layered in the baking dish and the crust batter is poured over the top and baked.

It is similar to a chicken pot pie, but so much easier, and I think it has a fluffier texture, and the chicken is shredded and not diced.

What is in This Chicken Cobbler Recipe?

There are minimal ingredients, and this recipe does use mostly short-cuts.
• Deboned, shredded Rotisserie Chicken
• Butter, Cream of Chicken Soup, Chicken Stock or Broth
• Milk, Cheddar Bay Biscuit Mix (with the seasoning packet)
• Poultry Seasoning, Garlic Powder, Onion Powder
• Optional: Frozen Mixed Vegetables (peas, carrots, corn, green beans)

How to Make This Chicken Cobbler Casserole

• Gather together the ingredients.
• Spread chicken in an even layer in 9″x13” baking dish.
• Pour melted butter evenly over the chicken. Do not stir.

• Season the chicken with the spices. Do not stir. Set aside.
• Whisk together the cream of chicken soup and chicken broth in a medium bowl.
• Pour the soup mixture evenly over chicken mixture. Do not stir.

• In a medium bowl, mix together biscuit mix and seasoning packet. You can add extra seasoning to the biscuit dough / batter if you want (garlic powder, parsley, etc.).
• Add the milk and mix. You can add some shredded cheddar cheese for a cheesy biscuit topping (I don’t usually).
• If using, add the frozen mixed vegetables (I forgot to take a photo of them being added). Do not stir.

• Pour the biscuit batter over the top. Do not stir.
• Bake at 375° F for about 45 minutes – 1 hour, or until the center is cooked and top is golden brown.
• Serve hot as is, or topped with sour cream.

Tips and Substitutions

  • Use any cooked, shredded chicken or leftover turkey, etc.
  • Use unsalted butter and low sodium soup and broth if you want less salt.
  • If you don’t have the Red Lobster® brand biscuit mix, use Bisquick®.
  • Add 1 cup of freshly shredded cheddar cheese to the biscuit batter.
  • Increase the chicken broth to 1 1/2 cups if you like a little more sauce in the bottom.
  • Substitute the cream of chicken soup with sour cream and some chicken bouillon.

Store leftover Chicken Cobbler in the refrigerator in an airtight container for up to 4 days.
I don’t recommend freezing it.

  • 1 9"x13" baking dish
  • 2 Medium Mixing Bowls

Ingredients

  • 1 Rotisserie Chicken* deboned & shredded (or any cooked shredded chicken)
  • ½ cup Butter melted
  • 1 teaspoon Poultry Seasoning
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 package Frozen Mixed Vegetables - optional (carrots, peas, corn, green beans)
  • 1 10.5 oz can Cream of Chicken Soup
  • 1 ¼ cups Chicken Stock or Broth
  • 2 cups Cheddar Bay Biscuit Mix (with seasoning packet) or 2 cups Bisquick
  • 2 cups Milk

Instructions

  • Spread chicken evenly in 9x13” baking dish.
  • Melt butter and pour evenly over the chicken. Do not stir.
  • Mix together soup and broth. Pour over chicken mixture. Do not stir.
  • If using frozen mixed vegetables, add them evenly over the chicken mixture. Do not stir.
  • Mix together biscuit mix, seasoning packet, and milk. You can add some extra seasoning if you want (garlic powder, etc.). Pour over chicken. Do not stir.
  • Bake at 375° F for about 45 minutes-1 hour, or until center is cooked and top is golden brown.

Notes

*You can also use leftover turkey.
