Maple Ginger Pork Chops are tender and super flavorful, thanks to the easy and delicious marinade. These marinated pork chops are great for baking or grilling.

In all my years of cooking, pork chops are the toughest. Literally! This "other white meat" can be a pain to get a tender, juicy result from.

I do have a secret weapon, though. Marinade. I have learned that by marinating pork chops you can achieve not only a juicier chop that is tender, but lots more flavor, too.

Today I'm sharing my favorite marinated pork chops recipe with you, and my two favorite methods of cooking them.

Which Pork Chops Are the Most Tender?

I like the bone-in Rib chops. They have more of that fatty rib meat and cook up tender.

Pork loin chops are leaner, so they tend to end up drier. Marinating does help!

How Long Should Pork Chops Marinate?

I think the very minimum is 4 hours, however try to marinate your pork chops longer if you can.

Overnight is the best. Even two nights! I have done this longer marinating time and the results were incredible!

What is the Best Method for Cooking Pork Chops?

There are two methods I like best, and three that I actually use:
• Baking. I like to bake pork chops at a high heat for a short amount of time. This yields great results.
• Searing/Baking. Quickly searing both sides of the chop in a hot skillet that you can transfer to the oven to finish is another great method.
• Grilling. This is my second favorite way to cook marinated chops. A medium-high grill and flip them a few times during cooking. Delicious!

Use the method that appeals to you. There is no wrong way.

Don't Overcook Them

Be careful not to overcook them. That is the surest way to get a tough, dry chop. No one wants that!

Use an instant-read meat thermometer. The internal temperature of the thickest part of the chop should be 140° when you take it off of the heat.

Then loosely cover it with foil to rest about 5 minutes and it will continue to cook and come up to 145°. which is the safe temperature for pork.

Ingredients

  • 2/3 cup Pure Maple Syrup 100% real maple syrup
  • 2/3 cup Beer something like Modelo Negra or other medium to dark beer. Not too hoppy tasting
  • 1 Tbsp Ginger Powder or fresh grated ginger
  • 1 1/2 tsp Kosher Salt
  • 1/2 tsp Pepper
  • 4 Bone-In Rib Pork Chops about 7 oz each, not too thick

Instructions

  • Add the maple syrup, beer, ginger, salt, and pepper to a gallon sized plastic zip-closure baggie, or a shallow bowl. Mix the ingredients together.
  • Add the pork chops and seal the baggie (or cover with plastic wrap or a lid, if using another container).
  • Place in the fridge and let marinate overnight, or even two nights, if you want the pork chops super tender. If you don't have that kind of time, then marinate for a minimum of 4 hours.

COOKING THE PORK CHOPS

  • Heat oven to 400° F.
  • Remove the pork chops from the marinade (discard marinade) and place on a baking sheet.
  • Bake for 10-13 minutes, then check the temperature with an instant read thermometer. You are looking for 140° F. Thicker chops will take longer.
  • Take the chops from the oven at 140° F and let rest, loosely covered with foil, for 5 minutes before serving

GRILLING

  • Heat grill to medium-high.
  • Remove the pork chops from the marinade (discard marinade) to greased grill and cook for 8-10 minutes, turning every 3 minutes, until juice runs clear and just a hint of pink remains. 140° F to 145° F.
  • Let rest, loosely covered with foil, for 5 minutes before serving.
