Baked Brie in Puff Pastry
When you are planning your party, one big item on your list will be the party food. And party appetizers are a must!
A good appetizer will always be appreciated by your guests, and when the appetizer recipe is this easy, you can make more than one kind for a nice variety.
What is Brie Cheese?
- Brie (pronounced "bree") is a soft cow's milk (traditionally) cheese from the region of Le Brie, France. It is often called the "Queen of Cheeses" by cheese lovers around the world.
- It has an edible rind with a whitish powdery looking exterior, and comes in a round shape. You will find brie packaged in round boxes, typically.
What is Puff Pastry?
- Puff pastry is light, flaky pastry made from a "laminated" dough (made with alternating layers of butter and dough).
- It puffs up when baked, and becomes super flaky and crisp on the outside.
- A regular pie type of crust is not as good for this recipe.
The steps to make this Baked Brie appetizer are simple:
I like to bring the corners up and over the cheese first. Then bring the sides up and pinch them together as seen in the photo below.
When the Baked Brie comes out of the oven, let it rest for about 10 minutes. It is best to bake the Brie to the point that it is nice and gooey, but not completely melted so that it can hold its form.
Transfer to a serving plate, then drizzle the whole thing with warm honey and sprinkle with some chopped pecans.
Some Variations
You can use the fig jam, or get creative and use something else, either sweet or savory.
• Seedless Raspberry Jam
• Chutney
• Honey
• Cranberry Sauce
• Caramelized Onions
• Or don't use any filling and just bake the brie in the pastry by itself.
Warm, gooey cheese that isn't too melted will stay on your cracker better. I actually prefer bread as it soaks up the meltier bits.

- ½ of a 17.3-ounce package Puff Pastry Sheets, (1 sheet), thawed according to package instructions
- 1 8-ounce Brie Cheese Round
- 1 Egg
- 1 Tablespoon Water
- ½ cup Fig Jam (or cranberry sauce, seedless raspberry jam, chutney)
- ½ cup Chopped Pecans (plus a few for garnish)
- 2 Tablespoons Warm Honey
Instructions
- Heat oven to 400°F. Unfold the pastry sheet on a cutting board. make sure the seams from being folded don't have holes. If they do, just pinch them closed.
- Place pastry sheet onto a baking sheet pan. Place the cheese round in the center of the pastry sheet.
- Spoon the jam onto the cheese round. Then sprinkle on the pecan pieces.
- Fold the pastry up, starting with the corners, over the cheese round to cover it. Press the seams together to seal.
- Whisk the egg and water together in a small bowl. Brush the seams and the entire exposed area of the pastry with the egg mixture. You won't use all of it.
- Bake for 20-25 minutes or until the pastry is a nice golden brown. Then remove from the oven and let stand for 10 minutes before transferring to a serving plate (It is best to bake the Brie to the point that it is gooey, but not completely melted so that it can hold its form).
- Drizzle the warm honey all over the top, and a few chopped pecans. Serve with crackers or bread.
Notes
- If you use a larger wheel of Brie, such as a 20-ounce size, you may need both of the puff pastry sheets that come in the package.
- Increase jam and nuts to your liking.
- Bake for 30 minutes.
