Slow Cooker Creamy Ranch Chicken
Equipment
- 4-quart to 6-quart Slow Cooker
Ingredients
- 3 large (8 oz) Chicken Breasts, halved, boneless and skinless
- 8 ounces Cream Cheese
- 2 Tablespoons Dry Ranch Dressing Mix (1-ounce packet)
- ½ cup Chicken Broth
- 1 cup Cheddar Cheese, shredded
Instructions
- Place the chicken in the bottom of the crockpot.
- Pour the broth in the crock and then sprinkle the chicken with the ranch dressing.
- Cut the cream cheese into four pieces and place them on top of the chicken.
- Sprinkle with the shredded cheese and place the lid on the crockpot.
- Cook on High for 4 hours or Low for 6, or until the temperature of the chicken reaches 165°F. I use a digital meat thermometer.
- Shred the chicken. You can use 2 forks, or a hand mixer works wonderfully, just place it in the crock and mix for a minute or two.
- Serve hot over buns, rice, potatoes, or pasta.

I made this as written and it was so good I tried a variation a week later. I used the same procedure but put a layer of cut up potatoes under everything else. The chicken came out just as well, and the potatoes were perfect cooked and seasoned. This recipe reminds me of a "chicken bake" from Costco. I like those and I love this recipe.
