Slow Cooker BBQ Pulled Chicken

Barbecued chicken is a wonderful thing! Being able to make it year round, thanks to your slow cooker, is even better.

The slow cooker, some barbecue sauce, and a few spices can transform plain chicken breasts into tender shredded meat that is perfect for sandwiches!

The steps to make this yummy crock pot barbecue pulled chicken are so easy. Here they are:

Will the Chicken Turn Out Dry?

Using boneless/skinless chicken breasts, there is the possibility of them drying out. That is only going to happen if you cook them too long.

I recommend cooking the chicken for the shorter amount of time (if it says 2-3 hours, use 2) to start.

Check it and use a digital meat thermometer to check the internal temperature. As soon as the chicken is at 165°F, you can turn off the slow cooker and prepare to shred it.

If you aren’t a fan of chicken breasts, use chicken thighs. They do require a longer cook time than breasts, and will be more juicy.

Just like with pulled pork, you can top your BBQ Pulled Chicken Sandwich with a creamy Coleslaw.

We love the crunch and extra flavor that cole slaw adds to a pulled chicken sandwich.

Can I use Frozen Chicken?

It is not recommended to use frozen chicken in a slow cooker due to the amount of time that the meat would be at an unsafe temperature.

I wouldn’t use frozen chicken also because the excess water that is released will water down the bbq sauce, and it won’t be nice and thick.
