This is an eggless cookie recipe, so not only does it save money, people with an egg sensitivity can enjoy them!
• Old Fashioned Oats – Quick oats can be used in a pinch.
• All-Purpose Flour
• Light Brown Sugar
• Applesauce – The unsweetened variety is best.
• Vanilla Extract – Adds a warm flavor.

• Butter – You can use unsalted or salted (If using salted, reduce salt in recipe to 1/8 teaspoon).

How To Make Apple Oatmeal Cookies
There is about 20 minute of chill time and only 15 minutes in the oven which helps give it the soft, chewy texture.
Step 1: In a medium saucepan melt butter, brown sugar, corn starch, and add the diced apples. Cook for 4-5 minutes until apples begin to soften.
Step 2: To a mixing bowl, beat together the remaining butter, applesauce, brown sugar and vanilla with an electric mixer on medium speed.
Step 3: In a medium bowl, add the oats, flour, baking soda, cinnamon, and salt.
Step 4: Mix together well.
Step 5: Add dry ingredients to wet ingredients and stir until just combined.
Step 6: Fold in the diced, cooked apples. Chill the dough for 20 minutes.
Step 7: Drop cookie dough onto prepared baking sheet using a cookie scoop, lined with parchment paper or a silicone mat and gently press them with the bottom of a glass or back of a spoon.
Step 8: Bake in a preheated 350°F oven for 15-17 minutes or until edges begin to turn golden brown.
Step 9: Let cool on a cooling rack until cool enough to eat.

Ingredients
- ½ cup Butter divided
- ⅔ cup Light Brown Sugar divided
- 1 teaspoon Corn Starch
- 2 small Apples peeled, cored, diced fine
- ½ cup Unsweetened Applesauce
- ½ teaspoon Vanilla Extract
- 2 cups Old Fashioned Oats
- 1 cup All-Purpose Flour
- ½ teaspoon Baking Soda
- ¼ teaspoon Salt
- 1 teaspoon Cinnamon

Instructions
- Preheat oven to 350°F, with rack in the center.
Prepare Apple Mixture
- In a medium sized sauce pan over medium heat melt 1 Tablespoon of the butter with the diced apples, 1 Tablespoon of the brown sugar, and the corn starch.
- Stir occasionally over medium heat for about 4 minutes, or until apples start to become soft. Set aside to cool.
Make the Cookie Dough
- In a medium sized mixing bowl add the remaining butter, remaining brown sugar, applesauce, and vanilla. Using a hand mixer (this step can be done using a stand mixer as well) blend well until light and fluffy.
- In a separate mixing bowl add the oats, flour, baking soda, salt, and cinnamon, and stir well.
- Slowly add the butter/applesauce mixture and mix evenly. Then fold in the apple chunks mixture until evenly combined.
- Using an ice cream scoop or spoon, scoop out even amounts of the dough onto a parchment lined baking sheet. You can form a mound or a ball and flatten into a cookie shape.
- Bake at 350°F for 17-20 minutes or until edges begin to turn brown.
- Let cool on a cooling rack until cool enough to eat. Ice with glaze if desired (See Notes).
Notes
Icing Recipe:
- 1 Tablespoon Unsalted Butter
- 1 Tablespoon Light Corn Syrup
- ½ teaspoon Vanilla Extract
- 2 Tablespoons Milk (or more for desired consistency)
- ⅛ teaspoon Salt
- 1 ½ cups Powdered Sugar

In a medium microwave safe bowl, add the butter, corn syrup, vanilla, milk, and salt. Microwave for 15 seconds, stir, and microwave 10 more seconds, if needed for butter to melt. Stir to combine.

Stir in the powdered sugar until fully dissolved. Add more milk if too thick. Add more powdered sugar if too thin.
