Oven Baked Beef Brisket

Cooking a Beef Brisket in the oven is an easy way to get tender, slow cooked meat that has really good flavor. The spice rub has plenty of time to infuse the meat, and the barbecue sauce adds another layer of smoky and savory flavor.

For the easiest dinner, this super tender Oven Baked BBQ Beef Brisket is coated with a flavorful dry rub that is made with ingredients commonly found in your pantry. Then it is slow-cooked to perfection.

This easy BBQ beef brisket recipe is a family favorite. We often have it for Sunday dinner. Sometimes we don't add barbecue sauce and instead add onions and beer or cider to braise it in.

Delicious bbq beef brisket is versatile because it goes well with most side dishes. We like to serve it with Baked Potato Wedges, Coleslaw, Chicken Taco Macaroni Salad, Mixed Bean Salad, or Mac and Cheese.

Which Cut is Best for a Brisket?

I prefer a flat-cut for this recipe, and for a brisket that you will be serving as slices. The point-cut brisket is fattier, so is better for pulled or smoked recipes. But this method works for both (you may need to cook a point-cut longer).

How Long Does Brisket Cook in the Oven?

This is a "low and slow" method, so with the oven temperature set at 275°F, a brisket will take about 5 hours to cook in the oven. Size and thickness will be a determining factor. The internal temperature of the meat at the thickest part should be 195°F to 205°F.

What Ingredients are in This Beef Brisket Recipe?

All you need to cook a moist, flavorful BBQ beef brisket are some common pantry ingredients.

If you don't want to mix up the spice rub, use a store-bought one. Same with the barbecue sauce, just use your favorite bottled sauce (Though, the homemade is really good)!

• 3-4 pounds Beef Brisket: Flat cut is best.
• Olive Oil: To help the seasonings stick.
• Dry Rub Seasoning: Brown Sugar, Smoked Paprika, Chipotle Pepper Seasoning, Salt, Black Pepper, Garlic Powder, Onion Powder, Cumin (or use your favorite store-bought rub).
• Homemade BBQ Sauce: Ketchup, Apple Cider Vinegar, Brown Sugar, Worcestershire Sauce, Liquid Smoke, Onion Powder, Garlic Powder, Black Pepper (or use your favorite bottled barbecue sauce).
• Water: For the roasting pan. Creates steam to keep the brisket moist while it cooks.

How to Make Oven Baked Barbecue Beef Brisket

This has a long cook time, but it's a super easy recipe!

• Heat the oven and place aluminum foil in the roasting pan. Then place the brisket in the pan.
• Coat the brisket all over with the olive oil.
• Mix up the spice rub and rub into all sides of the meat. Then let it sit and come to room temperature.

• Add water to the pan, not over the meat.
• Seal the meat in with a top layer of foil.

• Bake the brisket for about 3 1/2 hours, or until it is 180°F.
• Mix up the bbq sauce and coat the top of the brisket in it.
• Put back in the oven, uncovered, and increase heat to 350°F, and bake another 30 minutes.
• Then turn off the oven and let is sit another 30 minutes.

• Remove the meat to a cutting board and let sit, loosely tented with foil, for 20-30 minutes before slicing against the grain.
• The brisket is done when the internal temperature reaches between 195°F to 205°F at the thickest part of the meat. It should be fork-tender. A fork should be able to easily pull away some of the meat.

Helpful Brisket Recipe Tips

  • When you trim the brisket, leave about 1/2 inch of the "fat cap" on it and cook with the fat side up. This gives flavor and moisture.
  • Always set the meat out for about 30 minutes after applying the dry rub to allow the brisket to come to room temperature and absorb the seasoning before cooking.
  • Don't overcook the brisket. I can't stress how useful an Instant Read Thermometer is for cooking meat!
  • Let the brisket rest for 20-30 minutes, loosely tented with foil, after you take it out of the oven. The juices need to redistribute into the meat fibers before you slice it.
  • When you are ready to serve your brisket, then you can slice it. Be sure to slice against the grain, not with it. It makes all the difference in how tender and easy to eat it is!

What to Serve With Brisket

You can serve this dish with mashed potatoes, freshly baked dinner rolls, cucumber salad, spicy roasted sweet potatoes, or some creamy macaroni and cheese, and corn on the cob.

This Oven Baked Barbecue Beef Brisket is a great option for those on a low-carb diet. Serve it with a salad or riced cauliflower or other veggie for a simple and delicious meal.

What to Make with Leftover Brisket?

Use leftover brisket for beef brisket sandwiches, on a garden salad, tortilla sandwich wraps, with scrambled eggs in a breakfast hash, over a plate of nachos, or add to a bowl of soup.

Leftover Brisket Storage

Store the leftovers in an airtight container in the fridge for up to 4 days.
Reheat the meat on low heat in the oven or in a skillet, or in the microwave at low power. You can serve leftover brisket cold on a salad or in a sandwich or a wrap.

How to Freeze Leftover Brisket

Freeze for up to 3 months. Allow the brisket cool down to room temperature, then wrap the meat in foil or plastic wrap before placing it in an airtight container or a freezer bag (to help prevent freezer burn).
Defrost overnight in the refrigerator before reheating.

Equipment

Ingredients

Brisket

  • 3-4 pounds Beef Brisket (flat cut is best)
  • 1 Tablespoon Olive Oil

Spice Rub

  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Smoked Paprika
  • 1 teaspoon Chipotle Pepper Seasoning
  • 1 ¼ teaspoons Salt
  • 1 ½ teaspoons Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Cumin Powder
  • ½ teaspoon Black Pepper

For the Roasting Pan

  • 1 cup Water

Homemade BBQ Sauce (or use your favorite bottled)

  • 1 ½ cups Ketchup
  • ½ cup Apple Cider vinegar
  • ½ cup Brown Sugar
  • 2 Tablespoons Worcestershire Sauce
  • 1 teaspoon Liquid Smoke
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper

Instructions

  • Heat the oven to 275°F. Set rack to the middle.

Season the Meat

  • Rub the brisket on all sides with the olive oil.
  • In a small bowl, combine the brown sugar, paprika, chipotle pepper seasoning, salt, garlic powder, onion powder, cumin, and black pepper and rub over the entire brisket.
  • Place the brisket in a large roasting or disposable pan, fat side up. Let it come to room temperature before cooking.
  • Pour water into the roasting pan but not over the top of the brisket. Then cover pan tightly with aluminum foil. and place in the oven.

Bake the Brisket

  • Bake for 3 ½ hours, then check with a meat thermometer. The meat should read 180°F before continuing. You may need to continue baking if it isn’t up to that temperature.

Add BBQ Sauce

  • Combine the ingredients for the BBQ sauce. Remove the foil and spoon the BBQ sauce over the meat. Do not re-cover the pan with foil.

Continue Baking

  • Increase the oven temperature to 350°F and bake for another 30 minutes.
  • Turn off the oven and let the meat sit in the oven for another 30 minutes (without opening the door) before serving.

Rest the Meat

  • Remove the brisket from the oven and let it sit and rest for 10 minutes before serving (The brisket is cooked when the temperature reads 195°F. NOTE: The meat will rise in temperature by about 10° after it is removed from the oven while it rests).

Serve

  • To Serve, transfer the brisket to a cutting board. Discard the cooking liquid. Slice the brisket against the grain for the best, most tender results.

Notes

Cooking this for hours in the oven will help it cook slowly and keep it juicy and tender.
Cook the brisket with the fat side on top. This ensures the fat constantly drips over the meat as it cooks.

Store in an airtight container in the refrigerator for up to 5 days.
