To make these sweet Mango Popsicles, you’ll need popsicle sticks and a popsicle mold.
These popsicles are relatively simple to make with only 4 ingredients.
Ingredients Needed to Make Popsicles:
Mango Juice (or apricot nectar, peach juice, etc.)
Frozen Mango (if frozen mango isn’t available, you can use fresh)
Coconut Milk
Organic Sugar (or a natural sweetener)
How Do You Make Homemade Mango Popsicles?
- In a blender, puree frozen mango with mango juice, about 10 seconds if using a high speed blender, set aside.
- In a large bowl, mix the coconut milk and sugar.
- If you want a layered look, layer the popsicles as follows: add 2 tablespoons puréed mango, then set in a freezer for about 20 minutes. Once the first layer has semi-frozen, remove from the freezer, then add 2 tablespoon coconut milk mixture, set in the freezer for about 20 minutes, and repeat the process.
- For a faster result (without a layered look) you can mix the pureed mango and coconut milk mixture together, then pour into the popsicle mold.
- Gently tap the molds on the counter to remove any air bubbles, then insert the popsicle sticks and the mold cover. Then freeze for at least 5 hours, or overnight for best results.
- To remove the frozen popsicles from the molds, run the molds through warm water for about 10 seconds or allow it to sit at room temperature for about 5 minutes.
How Do You Make Mango Popsicles Creamy, Not Icy?
- These homemade popsicles are naturally creamy, unlike a traditional ice pop, because we use coconut milk instead of water.
- The coconut milk adds a delicious coconut flavor, making them taste almost tropical and adding the perfect amount of creaminess everyone will love.
- If you want to achieve a creamy dairy-free popsicle, these coconut mango popsicles are the perfect delicious summertime treat.
Tips & Variations
- There are a variety of fruit popsicles you can make. If you want to, you can use this recipe as a base and swap out mango for another fruit like strawberries or peaches!
- But I have to say, the fresh mango flavor and creamy texture of the coconut milk make for some truly delicious popsicles.
- Fruit popsicles are the perfect grab-and-go snack for those days when the kids are running around outside and need something to cool down and satisfy their sweet tooth. For when you would prefer to give them a healthier option instead of ice cream.
