Summer peaches are one of the most versatile fruits of the season. Even when not in season you can buy frozen peaches that are ripe and delicious.
Fruit in a green salad adds a lovely sweetness that plays well off of the slight saltiness of the dressing and feta cheese. It's such a nice combination!
How To Make a Dressing for Peach Salad
Most salad dressings need something acidic, such a vinegar or the juice of a citrus fruit. Then oil, such as extra virgin olive oil or other light oil is added. From there you want to season it with a little salt and pepper.
To balance out the acidic flavor, honey is my favorite sweetener to add.
Mixing it couldn't be easier! Just add all of the dressing ingredients to a bowl and whisk. Or, add to a small mason jar with a lid and shake well.

You can make any substitution that you want to suit your taste or diet.
• Walnuts are a nice substitute for the pine nuts.
• If you don't have blueberries, try strawberries.
• You can omit the feta cheese, or try a different variety, such a goat cheese.
• If you don't want peaches, try nectarines or strawberries.

Peach Salad with Blueberries and Feta
Equipment
- Grill or Frying Pan
Ingredients
Salad Dressing
- 2 Tablespoons Extra Virgin Olive Oil
- 3 Tablespoons Lemon Juice
- 1 teaspoon Dijon Mustard
- ¼ cup Honey
- ¼ teaspoon Salt, or to taste
- ¼ teaspoon Black Pepper
Salad
- 2 Peaches, Peeled, pitted, and sliced (frozen will also work*)
- 7 cups Mixed Salad Greens
- ½ cup Blueberries
- ¼ cup Pomegranate Arils (fresh or frozen)
- ¼ cup Pine Nuts (or Walnuts) Toasted for best flavor
- ½ cup Feta Cheese Crumbles
Instructions
- Add the salad dressing ingredients to a dish and whisk well. Set aside.
- Add the clean salad greens to a large serving dish. sprinkle on the blueberries, pomegranate seeds, feta cheese, and pine nuts. Set aside.
- Blanch the peaches in boiling water, then move to a bowl of ice water. It will then be easier to peel them. If you are not able to blanch them, just peel them using a small paring knife. Peel, slice in half, and remove the pit from the peaches.
- Heat your grill or frying pan to medium-high heat. Brush the peaches with some of the dressing. Then set the cut sides down on the surface of the grill or frying pan and cook until the peaches have a nice char on them**. Remove to a cutting board.
- When the peaches are cooled enough to handle, slice them and arrange on the salad.
- Pour the dressing evenly over the top of the salad and serve immediately.

This is soooo good! I didn't grill the peaches I tried frying them because I don't have a grill. We loved the flavors in the salad!
